Spicy baked beans

Home made baked beans less salt, no sugar and I like to pack it full of herbs. I make a big pot and freeze in ziplock food. bags, or you could use a muffin tin for small portions.


Ingredients

2 x tins Cannellini or Haricot beans – drained and rinsed
4 garlic cloves – finely chopped
1 red pepper diced
1 large onion finely chopped
500ml passata
3 tsp paprika
Pinch cayenne pepper (optional)
2 tbsp olive oil
1 tsp salt
1 small bunch flat leaf parsley – finely chopped
Optional: bunch oregano – finely chopped


Method

  1. Warm the oil in a large saucepan over a medium heat and add onions and garlic
  2. Cook for 5 minutes until soft
  3. Add the peppers and the paprika and cayenne and cook for another minute
  4. Add the beans and passata
  5. Bring to boil, reduce to a low simmer and simmer for 20-30 minutes until the sauce has thickened slightly
