These buns do not taste sweet they are like tea cakes but there’s no flour and only a small amount of sugar. They are great with nut butter or honey as a healthy snack. The whole grain fibre and protein slow down the blood sugar spike.
1 ½ cups ground almonds
2 tsp cinnamon
2 tbsp rapadura or coconut sugar
¼ cup of raisins
2 tsp baking powder
2 tbsp psyllium husk
½ cup ground flaxseed plus 3tbsp
½ tsp salt
1 tbsp apple cider vinegar (ACV)
200ml boiling water plus 1/3 cold
1. Preheat the oven 170 C. Grease or line a baking tray.
2. Mix together 3tbsp ground flax with 8 tbsp of water and leave to thicken for 10 minutes.
3. In a large bowl mix together the rest of the flax, ground almonds, baking powder, salt, cinnamon, currants/raisins, sugar and psyllium husk. Add the vinegar and the flax/water mixture.
4. Mix together. Combine the boiling and cold water and add this to the mixture until you have a dough type consistency.
5. Shape into buns (use a spoon or damp hands to stop it sticking to you) and cook on your baking tray for fr 55-60 minutes.
