Date and cocoa nutty, seedy bars

These are full of healthy fats and protein and sweetened with dates. I put them in a lined baking tin to set, then cut them into squares because I am too lazy to roll balls.


Ingredients

200g dates – use soft ones
200g of nuts (almonds or a mix) or use shelled hemp seeds (I did 100g hemp and 100g of nuts)
100g sunflower or pumpkin seeds
50 g sesame seeds
2 tbsp cocoa or cacao
1 tsp cinnamon (optional – good for sugar handling)


Method

1. If you are using whole nuts chop these first in the food processor. Tip into a dish and chop the sunflower or pumpkin seeds. Keep an eye you don’t want them to turn to flour. The pulse button is helpful.
2. Add the cocoa, cinnamon and the sesame seeds to the dry mix and blend a couple of times. Tip into the dish with the nuts.
3. Now blend the dates until they well chopped and like a thick paste. If the dates have gone dry you will need to simmer them with some water first to soften and re-hydrate them.
4. Now tip in the nut and seed mix and pulse a few times. Scrape the mixture down with a knife and repulse until well blended.
5. Press into a small, baking tin lined with greaseproof paper (30 x 25 cm’s).
6. Leave to set in the fridge and then slice into 15 squares or 30 squares depending on whether they are a snack or an after-dinner treat. Enjoy.
