A savoury, delicious cheese and vegetable slice. Perfect for a mid-morning snack or with soup, salad or poached eggs for lunch. Thanks to Jenny Tschiesche for the recipe from 'Real lunchtime food'.
Ingredients
200g courgettes, grated
200g carrots, grated
1 medium onion, grated
2 large eggs beaten or 2 flax eggs (2 tbsp flaxseeds soaked in 6 tbsp warm water for 10 mins)
Good pinch of mixed herbs
200g well flavoured cheese e.g. Parmesan, grated
200g rolled oats

Oven 200C/Fan 180C/Gas 6
Shallow 20x20cm square baking tin
Cook time 25 mins
Method
Mix all the ingredietns together well in a large bowl
Place the mixture into the lined baking tin and cook for 25 minutes or until golden brown in colour.
Slice and leave to cool before removing from the tin.
