Salabat (ginger & lemon tea)

A traditional Salabat tea from the Philippines to ward off colds and flu or warm you up on a winters day. Simmering the ginger maximises the flavour but you can also just infuse it with hot water. It great as a pick-me-up or to support digestion. Drink hot or cold, it's spicy and soothing.


Ingredients

1-2 lemons

750ml water

120g (14cm) ginger sliced

1 tbsp raw honey (optional)

Serves four


Method

  1. Juice the lemons and set juice aside
  2. Chop the lemon peel and bring to boil with water and ginger
  3. Reduce heat and simmer gently for about 10 minutes, add water if required.
  4. Strain the tea into a pot or mugs and once it has cooled a little add the lemon juice and honey if using.
  5. If you wish you can add more water to the lemon peel and ginger mix and boil again for a slightly weaker tea.
  6. Alternatively grate the ginger and put into a pot with boiling water.  Stir and leave to steep for 10 minutes.  Add the lemon juice and honey once it has cooled a little.  Add a pinch of cayenne and 1/2 tsp of turmeric if you fancy.
