Sweet and sour chicken

Easy, tasty and healthy.


Ingredients

4 chicken breasts, diced

2 tbsp olive oil

1 small onion, finely diced

2-3 cloves of garlic, diced

Chunck of ginger, grated

100g tinned pineapple in juice

1 red pepper diced

Small packet of baby sweetcorn chopped

Large handful of sugar snap peas, halved

Sauce

1 tbsp cornflour/arrowroot

2 tsp maple syrup

2 tbsp pineapple juice

2 tbsp dark soy sauce

2 tbsp rice vinegar

1 tbsp tomato puree 100-200 ml of water/chicken stock

Rice or noodles to serve


Method

  1. Add the onions, garlic and ginger to the pan with some olive oil and stir fry gently until softened.
  2. Add the chopped vegetables and stir fry on high for a few minutes until heated through and softened a little.
  3. Tip everything out into a bowl and stir fry the chicken until almost cooked through.
  4. Put the cornflour, syrup, pineapple juice, soy sauce and vinegar into a bowl, stir until smooth then add the tomato puree and water or stock.
  5. Pour this into the pan with the chicken and cook until the sauce is thickened and chicken cooked through.
  6. Add back the vegetables and stir through the pineapple chunks and heat for 2 minutes.
  7. Serve with rice or noodles.
