I took this every day when I was hiking in Wales this year. I took some potato herb salad with me, chopped this up and put it on top and that was my lunch sorted.
1 avocado
Handful of cherry tomatoes
Half a red pepper chopped (opt)
Thick slice of feta cheese
Chunk of cucumber
1 tbsp pumpkin seeds
Lemon juice
Herb potato salad (see separate recipe)
