Avocado and feta salad

I took this every day when I was hiking in Wales this year. I took some potato herb salad with me, chopped this up and put it on top and that was my lunch sorted.


Ingredients

1 avocado

Handful of cherry tomatoes

Half a red pepper chopped (opt)

Thick slice of feta cheese

Chunk of cucumber

1 tbsp pumpkin seeds

Lemon juice

Herb potato salad (see separate recipe)


Method

  1. Slice the avocado into chunks and tip the lemon juice over
  2. Slice the cherry tomatoes in half and chop up the pepper, cucumber and feta.
  3. Combine all the ingredients with the pumpkin seeds and tip over a large helping of potato salad.
