One pot, oven cook chicken and rice

This is great, tasty mid week food which cooks in the oven whilst you get on with your stuff. It doesn't look so pretty but it tastes good and the kids like it.


Ingredients

2 cups wholegrain rice, soaked overnight in water with a dash of ACV

8 chicken thighs

1 small onion finely chopped

2 garlic cloves chopped

1 small leek finely chopped

1 pack cherry tomatoes halved

Half a fennel, sliced

1L/4 cups chicken stock

4 tbsp petit pois

Handful coriander, chopped

Half pack of spinach (optional)

S&P, paprika works well also

Dash of soy sauce for serving


Method

  1. Put the oven on 180C.
  2. Stir fy the onion, garlic, leek and fennel in olive oil for about 10 minutes.
  3. Add the cherry tomatoes and allow to soften.
  4. Add the chicken thighs.
  5. Rinse the rice and add to pan with the stock.
  6. Stir in the petit pois or some chopped red pepper, season and cook in oven for 45 minutes.
  7. Stir through coriander and/or spinach and serve with a dash of soy sauce if you like.
