Bircher muesli - Overnight oats

The dry muesli can be scaled up and kept in the cupboard for 2 months. Add berries as desired and a drizzle of maple syrup or honey if needed.


Ingredients

2 cups rolled oats

1/4 cup shredded coconut

1/4 cup sliced almonds (or pumpkin or sunflower seeds)

2 tbsp ground flax

1/4 cup raisins

1/4 cup hemp seeds (shelled)

1/2 tsp cinnamon

150 mls almond/oat milk

200 mls Greek or coconut yogurt

1 small grated apple


Method

  1. Combine the dry ingredients.
  2. Stir in the milk, yogurt and apple, mix, cover and leave in the fridge overnight.
  3. Eat the next day.
